Sushi & Sausage

Yesterday, after my "exciting" gym experience and lots of house cleaning it was time to get ready for my night out (double date) with the one....the only...Heathereatsalmondbutter!!!!! I was super excited to meet her hubby and try a new restaurant! When we arrived the beautiful couple were already seated....
We did lots of chatting right away and I think the waitress was getting a little p'eed off because she came and asked for our order like 3 times and I wasn't ready. Hehe. I was to busy chatting away :) Finally, I decided to tear myself away from conversation and make a decision. I ordered the salmon shasimi and a seaweed salad and then at Heathers request I added a side of sweet potato fries. YUM! Here's sweet smiling Heather while we wait for our food...
here's the loot starting with shasimi...
Sorry for the blur there was low light and honestly my camera looks cool but its not that great. Sweet potato fries and seaweed salad...
My honeys half eaten burger...
I had such a fun time and the time went by way to fast. I seriously could have stayed all night and talked to them. I had some group pics but in the best one CD (Heather's hubby) decided to play a little joke so I wont be posting that one. Hahaha. Heather, hes so funny!!! I cant wait till our next adventure. Shopping and more food. The perfect combo.
After dinner the man and I went to another bar to hang out and enjoy each others company. I had a great time and 3 glasses of Zinfandel. Drinking always makes me tempted to eat bad stuff but I was prepared and packed a Kashi Go Lean pumpkin pie bar and ate it on the ride home. Honey, If you are out there I had a great time and I love you!

This morning I woke up early and made a bowl of oats for brekkie and then another one for my morning snack along with a chocolate rice protein shake...
I have been trying to avoid eggs because I am trying to do an elimination diet cause of my tummy problems. I was going good all day but then I failed miserably at dinner..

I picked up these sausages earlier to replace the eggs for breakfast but I ended up eating them with eggs for dinner. Opps. They were really yummy thought. Close up...
Final product...
All in all a pretty good day. Got some work done outside, visited with family and did some relaxing.

CONFESSION OF THE DAY: I am terrified of all things bugs! I used to love picking up lady bugs, rollie pollies and stuff as kid but a bug pooped or something in my hand once and I have been scared ever since :(.

A few questions:
  1. When you count calories do you count your green fibrous veggies? (just curious cause I never do and I am starting to think I should cause I eat so much of them)
  2. Does anyone have any suggestions for a significant protein source for breakfast besides eggs and protein powder?

Oh Beer Deer!!!! & Yummy Kale!!!

Yesterday, is sort of a blur. It was really rainy and crappy as was my mood. I did manage to get to the gym in the morning for my beloved full body workout but the rest of the day pretty much sucked! After logging back on to Fitday I have come to the conclusion that I am not getting enough calories between breakfast and lunch. Even though I am eating 3 meals in that time I should still be getting half my cals for the day and I was only hitting about 700 cals. because of this I was having small binges after lunch. Here's my lunch form yesterday. Kale chips, small half of a sweet potato with pumpkin butter, and 4 ounces turkey tenderloin. Not nearly enough...
As a result I then ate this...
....along with several other things not pictured, i.e. more peanut butter, cinnamon puffins, and dark chocolate smeared with more pb. I was so full from all this sweet stuff I didn't eat the rest of the night. NOT GOOD.

The highlight of the day was seeing this lovely deer in my back yard...
Oh and taking this video..

The funny part is is that neither of us really drink. Him more so than me but its like only a weekend thing. I am thinking she picked it up from Grandpa haha! She did stay the night there the night before.

Today, I wasn't at home most the day because I was cleaning my moms house. I did make a fab. bowl of snack oats before I left though.
1/3 cup oatmeal, 1/3 cup oat bran, dark chocolate cocoa powder and stevia and of course peanut butter. My afternoon snack was pretty good to. It was a first for me. I usually like my cottage cheese sweet.
I threw together some Lactose free cottage cheese, grape tomatoes, salt and pepper and a spinach flat out wrap. SOOOOOOOO GOOD!!! As mentioned in a previous post we are running low on food so dinner tonight was sloppily thrown together for me (they ate pancakes). I really think I found a gem though.
I know it doesn't look like anything special but the kale was outta this world!! I sauteed it with Pam on the stove, and then towards the end I added a large chopped up clove of garlic and a tbsp. of the dressing I mentioned in the post before this. It was sooooo good. I think kale chips are going to have to take a back seat for a while. Well now I am just catching up on some shows. I am sorta mad I missed the permier episode of In The Motherhood :(.

CONFESSION OF THE DAY: I once had my tongue and nose pierced. I also pierced my own belly button and second holes in my ears in high school. (dont judge me) LOL!!! :)

Keep Your Mind Outta The Gutter....

...but if you have been reading Sarah's blog then its probably already there.

Yesterday for lunch I knew I wanted sweet potato fries but was in a hurry to get out of the house and enjoy the weather so I tried a new method of cooking the fries. First, I cut the fry strips a little thinner than usual and then I salted and nuked for about 2 min. until just slightly soft. Then I heated a large skillet and sprayed with Pam and fried them up.
I will call them Pan Fried Sweet Potato Fries.I served them up with lots of natural ketchup and a BBQ chicken salad with leftover chicken from my mother in laws house.
I loved how they turned out! The texture was much better this way than in the oven. They stayed a lot more dense and crispy as opposed to the airy, mushy feel they get when cooked in the oven (if that makes sense). After lunch the little one and I headed out to the park. We had a blast and she forced me to play with her and another little girl in their "girls only" club house. We played on the play ground for about 45 min. and then hit one of the trails for a walk. About half way her little legs were failing so I had to carry her on my shoulders back to that car. It was snack time when we got home and I was still sweating from the park and the fact that my car has no AC at the moment, so I decided to make a smoothie and the smoothie decided to jump on my face ( I am pretty sure that shouldn't be all one sentence but I have no writing skills). I know I am taking a risk putting this pic up so get your mind out of the gutter!!!
The mix was mixed frozen fruit, almond milk, and cottage cheese for protein.
I also cut up some fruit

Can you tell I was bored? or maybe just avoiding house cleaning
After the man got home we finally finished up the garden and I got a few things planted in there. I wanted something simple for dinner so I threw these babies in oven...
I have had these before but not these new flavors. They were really good but you have to watch it because they are high in sodium. I tasted the teriyaki but ate the savory roast.

CONFESSION OF THE DAY: The man doesn't get paid till this Fri. so we are hanging by a shoestring with moo la and groceries. This week my goal is to try and create meals from what we have in the fridge and pantry without going to the store. GOOD LUCK ME!!

Sunshine Likes Pumpkin Butter Too

Yeaaaaa!! Its Friday. The only bad thing is that its Friday the 13th. Hopefully no bad luck for me or any one else for that matter. Ok, so first things first. I have to give Heather from http://heathereatsalmondbutter.com/ a big THANK YOU for mentioning me in her lovely, yummy blog. So in the afternoon I have been really struggling with extra snacking. I just cant seem to stay full in the time after lunch and before dinner. Well, this definitely does the trick! I have had it before but with acorn squash. Unfortunately the squash was still baking in the oven and I couldn't wait any longer so I nuked a sweet potato (5 ounces) and topped it with vanilla stevia, cinnamon, 1/3 cup 2% cc, more cinnamon, and a generous spoon full of peanut butter. Man, this keeps me full for hours and its soooo good. I am not sure the cal count but I am guessing its somewhere between 250 and 300. After my snack my parents stopped by and decided they were going to take the little out for a few hours which was great for me because it gave me the chance to return that hideous lamp and run a few errands. While I was out I also picked up some Valentines for my sweeties. The man and I both got home a little late so I was rushing to make dinner. I quickly whipped up some spaghetti and some broccoli (which the man hates so more for me) with a Thai style peanut sauce. Its was amazing and I am sure the peanut butter boy would be proud. The broccoli was quickly boiled and the sauce consisted of 2 Tbsp water, 1 Tbsp natural pb, 1 Tbsp lime juice (i used lemon), dash of red pepper and salt and then drizzle over the cooked broccoli. I was also supposed to add 2 Tbsp crushed peanuts but I didn't have any so I used almonds. Is there a limit on how much broccoli one should eat in one sitting? cause if there is I defiantly passed it.

This morning is my off morning from the gym so I am going to just lazy around, do some house cleaning, start my little indoor garden, and maybe do some last minute V-day planning. Well now that I think about it maybe not so much relaxing.

I started off the morning with eggs and fruit cobbler oats.
And thanks to Heather I picked up some oat bran. I was going to wait till I ran out of all my other boxes of oats but I conveniently had a coupon so why pass it up for less than a dollar? Loved the texture of these babies! I added in some banana, vanilla pp, the last of my TJ's pumpkin butter :( ,and vanilla stevia. Its a keeper.

Tomorrow the plans aren't to fancy. Mostly just spending the day with the little one. My present is my man is taking me on a trip to Whole Foods to pick out our dinner. It will probably consist of some seafood. Maybe crab legs and scallops. YUM! We might even sit down for some lunch while we are there. Then off to do some family bowling. Hope the rest of my day is as good as it has been so far!!!

P.S. here's a few great articles for all you fitness loving chicks..

CONFESSION OF THE DAY: As the little one gets older its getting harder and harder to find "alone" time with the man. Hopefully we will find a way to fit some in this weekend. I am in need!! Hahaha
