Wilderness Poets

Thank goodness my parents live only about 3 miles away cause that's where the little one and I went yesterday afternoon to stay the night while the mans gone away to NYC (don't worry I didn't sleep in their bed). My sweet mommy made chicken stir fry for dinner and in an attempt to use up all their fresh produce (they left for vacation this morning) I made a big ole salad for us all. Here's my plate...
All this veg left my tummy extremely full.

After dinner the kitten (still no name yet), the little one and I hung out on my moms bed watching Dancing With The Stars, and The Bachlorette while she packed. Whooo there's some fine boys on that show! Anyone see the pilot?

I woke mega early and headed over to the Y for the weight class I have been doing. I was ready to eat my right leg when I got home I made a quick bowl of oats but tried a little something different. Orange Cream Oats
They weren't actually very orange per say but the did contain fresh orange. In the mix
  • 1/2 cup oat bran
  • 2 inch chunk of banana
  • about 4 fresh orange slices
  • vanilla creme stevia
  • vanilla brown rice protein powder (Jay Robb of course)
I cooked the oats in the microwave with the banana and the orange slices. Took it out and threw it in the blender with the protein powder and vanilla stevia. YUM!!! It was almost like an orange cream popsicle. See the little orange specks...
For some reason when I get up early and do this class I am so starving the rest of the day. I don't know if its because I am getting a workout or if its just because I am up earlier? Anyway, at about 8:50 I went ahead and had my morning snack at my mom and dads. Leftover chicken stir fry straight from the fridge...
(that's leftover pork tenderloin underneath, I didn't eat that) I also had some steamed acorn squash with peanut butter and stevia to sweeten...
After eating my morning snack I left to pick up my sweet niece from her last HS exam for the summer. We are going to spend the day together since everyone else went out of town and left me :(. When I got home and checked the mail I was super surprised and excited to find this in there...
I ran inside and immediately ripped it open to check out the goods. This nice letter was enclosed...

Posinious Sun Bunnies

...hopefully that will make sense at the end of this post.

So yesterday after my workout and breakfast I was in a rush to get me ready for my doctors appointment because it was a good 30 miles away. I posted then made a quick shake before jumping in the shower. Strawberries, unsweetened choc. almond milk, dark choc. stevia, cocoa powder, choc. brown rice protein, and peanut butter...
All mixed up...
After showering, getting ready, and doing some basic straightening up I had like 4 minutes to eat lunch. I sloppily threw together some leftover taco meat and tomatoes from the night before into a baked acorn squash and shoveled the green beans down my throat....
Not enough calories but momma had to go!!!

After getting lost and then finally making it to my doctors appointment I found out that I have Polymorphous Light Eruption (PMLE). Sounds fun huh? You can read about it here or here and a million other places if you Google it. Basically in a nut shell I am allergic to the sun!! The doctor wrote me a prescription for a cream and an oral medication I have to take everyday for the whole summer!! I was also advised to use Blue Lizard Sunscreen and wash my clothes in this stuff. Also, before going on my vacation in the Dominican Republic I have to go in and get a Cortisone shot which will hopefully keep the rash away while I am there.

By the time I got home and cleaned up some more it was time for dinner so, I deiced to make a quick homemade pizza using my new favorite Whole Wheat Pizza Dough Recipe that I made once before here. I was in such a hurry to get it together so I could I watch my shows (Biggest Loser, AI, and Desperate Housewives of New York) that I totally screwed up the dough. Basically to redeem the damage I had done I had to re ball it all up the pizza sauce mixed in and bake in a pan. I was praying to Sweet Baby Jesus that it would turn out because I had a hungry 3 year old bugging the crap outta me. I told them that the "pizza sauce was baked in the crust". I wonder if this is a new concept?? Not a good pic but here it is after baking it first without toppings...

This was the last pic I got because unfortunately my camera died. My portion is the one without the cheese. I was really happy with the result though, it actually turned out great and the crust turned out extra thick like a "pan" pizza crust.

This morning I skipped my workout (no biggie) because we got invited by my sister in law to join my little nephew on his class field trip to the Science Museum. We had to leave early and I decided I would try out yet another new sausage I had picked up the other on sale at Kroger.
UGH!! It was by far the worst one I have had!! It was just greasy and nasty and I couldn't even finish it. If you like good ole baseball stadium sausages then you would like this. Really the stats weren't even very impressive. If you want to see them go here. I'm not wasting my time. Now I just have to find someone to pawn them off on. hehehe!!

On the way home I stopped to pick up my prescription for my PMLE. They wanted $415 dollars for the cream. What a FARKIN joke!!! My insurance covered a whopping $12 of it. I laughed and said "no thanks". Now I am just chillin here thinking about how its 4 o'clock and I don't have dinner planned.....Think I will just watch Oprah's show about the girls at the Bunny Ranch. Classssssyyyyy!!!! Air Force Amy anyone???

Sometimes Its Just Better Without One...

the title that is.

Hey, wow I have really been MIA lately! Now that it is getting warm outside I find myself curled up at the computer less, which I guess is a good thing :). Also, my camera died and I kept forgetting to put it on the charger (bad blogger!!). Enough excuses and on to yumminess. I had my first savory acorn squash the other day and loved it.
I usually eat it this way. This time I filled it with some left over spaghetti meat and had a side of my favorite veggies (brussel sprouts). Super, super good it still had a slight sweetness which I loved and thought went great with sauce and meat! I also tried a new sausage :)!
Here I ate it with a leftover Pan "Fried" Chicken Burger and salad with broccoli slaw.

Here I ate it as a snack with an Italian Herb Flatout wrap, red pepper hummus and spinach.
I really liked this sausage and despite the name, "Spicy" my taste buds didn't find it very spicy at all and I thought it had a great flavor. This particular sausage has only

100 cals, 11g of protein, 6g of fat and 2 carbs.

I have eaten it for a quick dinner, snack and breakfast. I love that they are all fully cooked and natural so they are so quick and easy to make! Just nuke for 30 sec., grill for a few minutes, or cut up and warm in a pan. I must admit I have even popped one in my mouth cold.

Yesterday was the little ones last day in gymnastics and we have officially moved on to karate.

Today, I went hiking with my Aunt. We had a great time and probably went about 6 miles. It was a great change of pace and I had such a great time chatting that it didn't even feel like exercise! My Aunt....Before I left I broke into some loot that a sweet little fairy left me and made a shake in my new shaker (also left by the sweet little fairy). Jay Robb, I am lovin the new Vanilla Brown Rice Protein Powder!!! Your a protein genius! Thank you!!
I havent been making a lot of dinners lately because the man has been eating out a lot for work. Hopefully I will get in a few good ones the rest of the this week.

CONFESSION OF THE DAY: I never had bad skin until after I got pregnant. Gosh, it sucks now!!! Maybe these hormones the doctor has me on will clear things up???

Frittatas And Fun...

Lunch yesterday was a stir fry made with leftover portobellos and sausage from the night before.
It was great. I also added in some onion, broccoli, grape tomatoes, garlic and ls soy sauce. For my snack I gave into my craving.
Acorn squash, naturally more peanut butter (my all time fav) and a few toasted cinnamon squares cereal from Cascadian Farms. I also add a little liquid stevia and cinnamon for extra sweetness. YUMMY!!

For dinner I decided on breakfast since a had a lot of eggs that I cant eat :(. So for the man and little one I made a Spinach Frittata and Cheddar Muffins.
They are both really simple and obviously healthy :).

Spinach Frittata
  • 6 egg whites
  • 1 egg yolk
  • 1/4 cup low-fat milk
  • 1 small garlic clove, finely minced
  • 2 green onion finely sliced
  • 1tbsp olive oil
  • 1/2 large white onion chopped
  • 1/2 10 ounce package of baby spinach
  • 1/4 cup grated Parmesan or Romano cheese
Method:
  1. Set oven to broil. Beat egg whites until very frothy. whip in yolk, milk, green onion, garlic. Set aside
  2. Preheat oil in an ovenproof non stick skillet. Add onion and saute until soft and then add spinach. When wilted add egg mixture. Lower heat and sprinkle cheese on top.
  3. Cook slowly until it is firm at the edges and around the middle. Place under the broiler until lightly browned on top.
172 calories, 9 gram of fat, 8 carbs, 16 grams protein

Cheddar Muffins
  • 1 3/4 cup whole wheat flour
  • 2 tbsp raw brown sugar
  • 1 tbsp baking powder
  • 3/4 tsp sea salt
  • 1 1/2 cup shredded low fat cheddar cheese
  • 3/4 cup Yves meatless ham
  • 1 egg beaten
  • 1 cup skim milk
  • 2 tbsp canola oil
Method:
  1. Preheat oven to 400. Line muffin tin with cups (I got ten muffins). In a large bowl combine flour, sugar, baking powder, and salt. Stir in cheese and ham. In a small bowl combine egg, milk and oil. Pour liquid ingredients into the flour mixture and stir until flour is wet. Fill muffin tins to the top and bake for 20 to 25 min.
95 calories, 3 grams fat, 11 carbs, 5.5 grams protein

Everything turned out great (thanks Clean Eating Mag!!), But I couldn't eat any of it :(. I did however manage to eat this lovely late night snack...
Vitatop, peanut butter, and dark chocolate chips.

This morning I was excited to wake up and try my Oat Groats that had been soaking for a day and then simmered on the stove waiting for me to devour them. nom nom!! Here's what they looked like cooked...

So good. Just like regular oats but a bit chewier texture. I also had sausage and cottage cheese on the side...
After breakfast it was off to get ready to meet my darling friend Heather for a fun filled day of eating and shopping!! Of course we ate at Whole Foods, once again. My view of my plate (I got the salad bar)...

  • Curried wheat berries
  • roasted red pepper hummus

  • tempeh (first time trying it, I must say it had a strong dog food taste, not that I have tasted dog food, ok you got me, I have)

I think that's all. Its 8:35 pm and I am still some what full from that salad!! We also managed to hit up Whole Body, Urban Outfitters and Trader Joes. Pics of some of the goodies in my next post.LOVE YOU HEATHER!!!!!!! Don't forget the angle. It does wonders!! Hahaha :)

CONFESSION OF THE DAY: Being a stay at home mom is fun and all but sometimes you just need a BREAK!! Today was one of those times. The little one was starting to drive me up the wall and I know the feeling was mutual!! We are only human and even though she is only 3 she needs a break from me just as much as I need one from her. In fact, I insisted she stay the night tonight at my parents and she didn't argue!! LOL. I know she will have fun and will be elated to see me in the morning. I love that feeling when she runs to me after we have been apart!!

Whats The Deal People??

Ok, whats the deal? I haven't gotten one comment since I changed my template. Is it that ugly?

On to last nights dinner. I made some simple baked chicken nuggets and baked asparagus. Also, for the man and little one I made some mashed red potatoes that I whipped up in the blender. I am so addicted to my blender! Its probably going to blow up soon because I use it so much. The man kept raving about the potatoes. It had to be that I blended them because I didn't do anything else different. The blender just gave them a great texture.
This is my plate. I skipped out on the carbs and opted for a romaine salad. Later for a snack I put 3 egg whites in pan and topped with thinly sliced pear and cinnamon and cooked like an omelet. When finished I added a little scoop of Better n Butter and homemade hazelnut almond butter. Tasted so good! The Better N Butter mixed with the pear tasted just like caramel. I felt like I was eating a caramelized pear crepe. Next time I am going to roll it up and top with whip cream to make it all pretty.
Yesterday ended up being a good day. I had cravings but I snacked on celery and carrots to keep me from eating my body weight in chocolate and peanut butter. An over all success!

Today is officially the 3rd day with no gym. I am getting a little ansy but I am going to enjoy my time off because I will up bright (or dark actually) and early tomorrow to go. I think these few days have been very beneficial. Everyone needs some time off. Its all about balance, remember?
For brekkie I cooked some chicken scrambled eggs, and some blended cocoa Irish oats. There in back ground is my favorite salsa. I almost cant eat eggs with out it.
Yes, I know, my bowl is chipped.

Snack was pretty much my favorite thing ever! Acorn squash baked with cinnamon and then filled with cottage and peanut butter.
I ran to the store to pick up some stuff I really didn't need and then came home starving and had some leftovers from last night. I also had an apple in the car and a piece of cinnamon raisin Ezekiel toast on the side with lunch. Honestly I don't know what is with the weather here! It has been freezing raining (does that make sense?) here all morning and when I got home it started snowing really hard with the biggest snow flakes I think I have ever seen. I tried to take a pic but it obviously doesn't do them any justice. Lets I think now I am going to experiment making whole wheat tortillas. Or go to the mall. HMmmmmmm....

CONFESSION OF THE DAY: I am a chronic returner of clothes. I buy stuff and always leave the tags on. I might even wear it once before returning the item. I think I just change my mind a lot. I am so indecisive its ridiculous!! Its like I buy something and a few days later I see something I like better and then I the returning or exchanging. I guess I feel like I am saving money or something...IDK????
