Christmas Cookies & Vegan Pancakes

I have been dying to bake cookies for sometime now. I did make a few batches of the most amazing pumpkin chocolate chip cookies ever but it had been a while. I woke up sick Friday but knew that wouldn't stop me :) so I packed up the little one and all our cookie ingredients and headed to my mommas house for some rest and some cookie baking!

After resting for a few hours while she kindly watched my little monster I finally mustered the energy to get up and get baking.

First the little one and I had to put on our matching aprons...
and then we got to work on our dough..I have never seen anyone so happy to decorate cookies in all my life!
(even grannies can have some cleavage)

hardly (haha)..

Before we knew it the whole fam joined in, gotta make one if ya wanna eat one...
Some of the other, sub par to mine, masterpieces...
Then just like that the hard work disappeared....

I love kids at Christmas :).

OK enough about cookies and on to my breakfast this morning, Chocolate Vegan Pancakes. I have been dying to make Katie's Brownie Batter Pancakes but have an allergy to all protein powder as well as eggs (which aren't in hers) so I did my own mixing and matching of recipes and came up with this...
Chocolate Vegan Pancakes



  • 1/3 cup ww pastry flour
  • 1/2 cup almond milk
  • 2/3 tsp baking powder
  • dash of salt
  • 1 tbsp dark chocolate cocoa powder
  • 1 tbsp applesauce
  • stevia to taste
mix all dry ingredients and then add wet, cook in a hot skillet, add toppings..
and devour...
I love blogging with a full belly and a recipe fresh in my mind :) :)

CONFESSION OF THE DAY: This year instead of buying gifts for each other for Christmas my husband and I bought stuff for the house and I love it!! Can you say bar-stools and oriental rug!! :) :0

  3. LOVE the brownie batter pancakes and I have yet to make them but really need to get on it. I need to sub out for the wheat flour due to my gluten issues but that's pretty easy...I just need to make them, yours looks awesome, Justine!

    And can I just say that the pics of you, your lil one, and your mom, all making cookies has me crying tears of joy as it brings back childhood memories of me, my mom, and grandma. I can't wait til another year or so when my lil one is old enough to partake :)

  5. Justine, I think your cookie was definitely a masterpiece, and please tell your mom that her boobs look awesome. :)

    So happy you finally discovered a pancake recipe that didn't upset your belly. I'm obsessed with them myself. In fact, I think I'm declaring this pancake week over at HEAB.

    My family and I always used to make these Spritzer gun cookies and then decorate them. I miss that tradition!

    Can't wait to see your new barstools and rugs. :)

  9. I made Christmas cookies last year with pretty much the same cookie cutter shapes! Yours is nothing short of a masterpiece though ;) Mine were not as pretty!

    I (and much of the blogging community) am on a pancake craze these days. I gotta have them every weekend. So good!

  14. Looks like tons of fun and yummy cookies!! I made chocolate chip cookies for the family and then made some allergy friendly cookies for me. They tasted like pecan sandies! YUM~

    I might attempt to make some allergy friendly gingerbread men today. We are snowed in:) Snow always makes me want to bake!
