Weekend Update

Hey guys :). I am here to recap my relaxing weekend with some of my eats and activities. I will start with eats. Here are some of my snacks...
That is some delicious carrots and honey and a half drunk glass of frozen chocolate milk all enjoyed together after Friday nights dinner.
My ants were Saturdays post boat snack.

Most of my breakfasts have been fresh fruit "cereal"....

  • 1 peach
  • 1 banana
  • blueberries
  • almond milk
  • almond butter

  • lots of banana
  • 1 peach
  • strawberries
  • almond milk
  • almond butter
And fresh fruit on its own...
...while catching up on my shows :)

Lunches have been nice and carby with lots of salads...
Salad with fresh garden green beans and lots of guac "dressing" and a side of oats with coconut butter....
Talk about some healthy fats! The oats were sweetened to perfection with my new NuNaturals Stevia.

Salad with hummus "dressing", and an opened face grilled portabella mushroom sandwich on sprouted bread with slices of avo....
Mmmm. My favorite lunch of the weekend.

Dinners have consisted mostly of protein...
Big ole salad topped with chicken, portabella and lots of hot salsa.

That corn was pretty odd. Don't ya think...
Dessert has been mostly this...

I also made the man his first banana soft serve with raw chocolate sauce...

We also chilled on the lake. Just us and the little one...
And I tended to my garden...
I've got 3 of these babies!!

Hope everyone had a just as fun and relaxing weekend as I did. My detox/food combining is going great so far now that I have taken a few steps back.

CONFESSION OF THE DAY: (sorry if there are any guys reading this) My bikini line is outta control!! The weird thing is it is only on one side. Even if I shave it you can still see it under the skin. Do any of you have any bikini line advice? Waxing? or other methods that have worked for you? Much appreciated!!!

P.S. Have any of you ever seen the show 1,000 Ways To Die? That shizzzz is cuhrayzeeeee!!!!

Burning Questions Answered

...Maybe not but that just sounded good.

Whats up? I am so happy right now to be typing on the lap top. It has been out of order for a few months now and the man finally fixed it (thanks babe, its about time). So the plan is to go over a few of my eats and activities from today and then answer a few questions that I have been getting from you lovely ladies. Capesh?

After hittin up my man "Gym" this morning I was really missin an old fav so I brought back the blended grains spinach style...
...and topped with pb of course :).

Snack was a shake and then it was off to story time at the local Barnes and Noble so the little one could be entertained while I suck in as much information from all the books I have been wanting to read but am to cheap to buy.

After story time we headed to the fountains for some fun....
We went with a friend I made through my blog :) and her two little angels. I feel very lucky and fortunate to have made friends through my bloggie!! I would have to say that is my favorite part of having a blog.

We came home and had lunch. I made what I was hankering for....
Spicy butternut squash fries. I also made a quick stir-fry served over spinach...

  • chicken
  • onion
  • broccoli
  • yellow pepper
  • fresh ginger
  • soy sauce
  • tomatoes for color :)
Before karate I had the left over spicy butternut fries dipped in pb...
Carrot sticks and apples with two jars for dipping...
Came home and made spaghetti and garlic bread for the gang. I served mine over zucchini noodles with a side salad...
Now on to a few questions I have received lately. A lot of you have been wondering how I make my Dark Chocolate Oat Bran...
Nothing better than dessert for breakfast without having to feel guilty right? Here's the breakdown..
Mix together until evenly dispersed and most lumps are gone. I then add water and I always eyeball it. Nuke for 2 minutes. Add 30 sec. if its too watery. Next, I add several drops of Dark Chocolate Now Stevia. I also usually add a small hunk of banana before cooking and sometimes I add chia seeds. The possibilities are really endless.

Another question I have been getting is how I cook my butternut squash fries so they are crispy and not soggy. I always start by trying to...
  1. Cut them all about the same size that way they all cook in the same amount of time
  2. I then place them on a plate and season them to my liking. I do many combos of the following
  • chili powder
  • salt
  • pepper
  • cinnamon
  • paprika
3. I then find a pan at least an inch deep and place a wire oven safe rack on top as seen here.
4. This is an important step: Make sure to space out the fries with at least an inch apart. If you place them to close together it will cause the squash to hold in the moisture.
5. Finally I bake it on the center rack at 425 for about 25 minutes

The result is perfect crispy fries :).

CONFESSION OF THE DAY: I love shopping at used designer clothing stores. I recently found a new one here in Nashville and picked up a pair of Habitual Jeans that go for $220 for a measly 20 bucks!!! What a deal, huh?

Kitty Konundrum

So I totally had a post laid out for yesterday. I came upstairs, pulled out the lap top and then got a call form the little one. "Mama"!!!!. So I sat it down and went to check on her needs. When I came back a minute later the kitten (still has no official name) was standing on the lap top and my screen was gone and the mouse wouldn't work :(. BLAH!!! Ill be honest, I was more productive yesterday. Amazing what a day without the Internet can do!

Anyway, here's a quick recap of Wednesday and Thursday. I am guessing this was my mid morning Wednesday snack...

I think it was a strawberry and pineapple smoothie.
  • fresh pineapple
  • frozen strawberries
  • 1 cup unsweetened vanilla almond milk
  • ice
  • stevia
Wed. lunch....
Later, after lunch the little one and I decided that we were going to go to a matinee to see the new Hannah Montana movie. Before I left we shared this scrumpdilliumptious snack...
Yes, that is the beautiful Wilderness Poets nut butters melted on top (see a review here). As you can see I had some of the Cashew Cocoa and the Sesame Pistachio. They were the perfect addition to my warm melty Chocolate Chip Vitatop. Mmmmmm.

We then headed to the movies. We were early so I snapped a few pics of sassy pants...
I joined the action...
(man that shadow really makes my nose look weird)

Surprisingly the movie was fab!! and the little one danced her way through the whole thing...



There were only 3 other people there besides us :).

Although the movie was great and I had an awesome time, on the way out the theater I fell and busted my grill...

Later I made Green Pea Guac....
And had some with dinner...
That's roasted eggplant mixed with another one of my random sausages.

Later I picked up the man from the airport. I was so tired when we got home and just wanted to sleep but he really really really missed me....A LOT (if you know what I mean) hehehe!! Anyway, I got to bed later than planned and had to get up at 4:30am to make it to my weekly weight class. Like a tard I did the 50 min. weight class (with sore knees) and then did a 45 min. spin class. OUCH!

Thursday, I apparently made a smoothie....
Packed a salad to take to the park...
and a side of butternut squash fries..
I also had a much needed LADIES NIGHT!! Sadly this is my only pic..

No gym today. Just a bowl of yummy almond butter, banana oats..
Thanks to Wildnerness Poets Hemp Nut Butter I am becoming a fan of chunky nut butter!!

What do you prefer? Chunky or smooth?

Highs and Lows

My weekend had it highs and lows but mostly it was pretty relaxing and I got to spend lots of time with my two favorite people. I'll recap Saturdays eats which was plenty and plenty not pictured!!

Breakfast started with my typical bowl of oats and a NEW sausage...
After heating it up I chopped it up with a few spoonful's of cottage and added some cinnamon to hopefully bring out the apple flavor...
I was a bit disappointed with the lack of apple flavor. Not even any apple chunks, can you believe them? I didn't realize the ingredients just said apple powder :(. Damn it I just realized it also contains soy!!! Which kinda brings up the reason why my weekend had some lows. I think I may have mentioned it before but I have been really having some tummy problems which are now turning into other things which I believe may all tie in together and be some kind of food intolerance. Some of my symptoms..
  • horrible gas
  • bloating
  • stomach pain
  • cramps
  • eczema (inside of arms and a little on top lip)
  • loss of menstrual cycle (3 1/2 years now)
  • depression
  • etc, etc, etc....
it has now been going on for about 2 years and I am at my breaking point as the symptoms seem to be getting worse and worse!!! I have already cut out dairy and eggs which I know bothers me. I have now come to the conclusion that soy, and wheat may also be causing problems. This is all a lot to take in and I feel like "WHAT THE HELL DO I HAVE LEFT TO EAT"? I am currently in the process of finding a doctor to hopefully help me solve this mystery. (I have already seen several)

In the mean time back to my eats. Not to sure what I ate for morning snack and lunch but come time for my pre dinner snack I couldn't decide and wanted some of everything. So that's what I had, some of everything...
Hummus, peanut butter, cucumber, celery, red and yellow bell peppers, and a piece of Deviled Caribbean Chicken left from Friday night. Left me satisfied. Dinner I had more Deviled Chicken and a bed of spinach, mixed greens and kale with peppers, tomato, cucumber and fresh mango...
I was still hungry after dinner so I made this...
Hummus, peanut butter, flatout chips and apple slices. After dinner the little one begged me to make her an evil processed cupcake with one of her birthday presents. I put it off long enough so it was time to give in. ( a high for her) Here's the high tech equipment...
The cupcake "fresh" out of the microwave (looked pretty unappetizing if you ask me)...

I snacked on chocolate chips and peanut butter straight from the jar while getting all this together. I did it but I don't condone it!!

Now for the amazing frosting machine....

If you ask me this thing is a hunk of junk and the cupcake was so dry my little one couldn't even finish it!! GROSS!!! I guess this was a low.

First bite...
Sunday my tummy was really acting up (another low) but I did manage to spend some lovely time with my man before he left for New York this morning (high and a low). The only eats pic I have is of this shake....

Saturday and today I hit the gym and did a circuit that I jotted down out of Jillian Michael s new book while at Barnes and Noble Friday night. Whooo!! Its killer!!

I will leave you with today's lunch...
Boiled and spiced kale, pork tenderloin, butternut squash tots, and smashed cauliflower.

The man wont be home from New York til late Wed. night and I don't do so good alone :(. I am not looking forward to the next few days but happy for him to get to see a new city. Honey, if you read this on your crackberry the little one and I love you and miss you!!! Be good!!

CONFESSION OF THE DAY: I slept with my mom and dad till I was about 15 years old (not in the middle). I told you I don't like being alone!! I also had horrible nightmares :(.
