Date With Mom

Currently I am watching the season finale of The Biggest Loser. Love this show! Those people are all so amazing and have done great in their journey. Props to them.

This morning I woke up at the bright dark and early time of 4:30 am to hit up a Just Weights class at the Y as promised. I was already sore from yesterdays workout and this class was pretty tough! It was 45 min long and after ward I hit up the elliptical for about 20 min. All of my body parts have been progressively getting more and more sore one by one through out the day. It now hurts my chest and back when I breath. haha Tomorrow is definitely a day off!!

Breakfast was pretty boring so no pics. My snack was a little more interesting because we are running low on the groceries....
All together now...
One Tumaro's low carb tortilla, Heather's homemade almond butter, cottage cheese, spinach, cinnamon and a few drops of stevia. I must say it was pretty yummy!!

For lunch I took my mommy (yes I said mommy) out for her Mothers Day gift. We hit up a new place in town called Urban Flats. We started off with the Flat Dips appetizer...
If I recall correctly from left to right is a macadamia nut hummus (somewhat sweet, my fav. out of all and I cant wait to recreate), an olive dip, sun dried tomato dip??, and a traditional hummus. Of course we had to order extra flat bread!!

Next up was the main courses which we also split. This one is the Urban Salad with rare tuna...
I was not a fan of this salad and the tuna was way to fishy for my taste!! Must have been old??

This is the Fig and Prosciutto Pizza....
It had great flavors over all. It was also something I would like to recreate at home but without the cheese. Some bites were extremely salty for my taste and my mom agreed. I hate to end on a sour note but the service was also sucky!! Heather, I am glad we didnt waste a lunch date here!!!

My stomach became extremely upset after this meal! I went home and took a nap and skipped my afternoon snack because my tummy was still full and upset from lunch.

For dinner the man and the little one had leftover pizza from last night. I made a Mexi Tuna Salad...

The tuna was mixed with salsa, onion and fresh corn on the cob. I then put that on a bed of raw spinach and kale and topped with more corn cut from the cob.
It was so good! Better than restaurant for sure! On the side I had a bowl of fresh steamed brussel sprouts..
My belly is still hurting as a type. I know I have some kind of food allergy or irritation but I cannot figure it out for the life of me :( I just dipped into the jar of peanut butter and the container of cottage cheese. Yum!! Has to be one of my all time favorite combos :)

CONFESSION OF THE DAY: I was preggo (pregnant) before I was married. It wasn't a surprise, we were trying :). I like to do things backwards :) :)

U-G-L-I You Ain't Got No Alibi....

....You Yummy!!!!

Even though I haven't officially entered Katie's Contest, The New Foods Challenge, I decided I would still have a go at her challenge and I will get to that in moment.

First, I want to start with this mornings workout which majorly sucked a**!! I didn't feel like going in the first place but I forced myself there. When I got there I almost turned around but then I reasoned with myself. I went in and just pretty much went through the motions barley breaking a sweat. Got home and had a shi@#$ breakfast. Dont know why but it just sucked. I am definitly in a breakfast rut!! Ideas that dont include eggs anyone???? Heres the blah breakfast pic....
Double the chocolate double the fun?? Not today!!!

My morning snack was a little more titillating. I got to try a new food that I snagged at the grocery store yesterday...
I am so glad I tried this it was really yummy!! Here's a description from Wikipedia:

An ugli fruit (pronounced /ˈʌɡli/ "ugly") is a Jamaican tangelo, a citrus fruit created by hybridizing a grapefruit (or pomelo according to some sources) and a tangerine. Its species is Citrus reticulata x Citrus paradisi.[1]

The sats were pretty good as well. Only containg 35 cals and 8 carbs in a 5oz serving. Wanna guess what I ate it with?
SAUSAGE!! Wrapped in a spinach flatout with more spinach, and mustard. Hold on to your panties cause the day is about to turn from UGLI to PRECIOUS!!

Lunch was leftover Turkey Chickpea Burgers...
Then I headed over to a friend in needs house. Wanna know what she needed? Someone to take one of the 6 PRECIOUS angels that had been abandoned at her house. I hesitantly obliged.
Look how tiny!!! Only 3 weeks old and as sweet as can be. She or he is now officially part of our family. I hope I am not making a mistake!!!

CONFESSION OF THE DAY: Although the kitten is cute and all I am seriously regretting the decision I made to keep him. Its such a huge responsibility and also a money sucker or money we don't have!!!

Sometimes Its Just Better Without One...

the title that is.

Hey, wow I have really been MIA lately! Now that it is getting warm outside I find myself curled up at the computer less, which I guess is a good thing :). Also, my camera died and I kept forgetting to put it on the charger (bad blogger!!). Enough excuses and on to yumminess. I had my first savory acorn squash the other day and loved it.
I usually eat it this way. This time I filled it with some left over spaghetti meat and had a side of my favorite veggies (brussel sprouts). Super, super good it still had a slight sweetness which I loved and thought went great with sauce and meat! I also tried a new sausage :)!
Here I ate it with a leftover Pan "Fried" Chicken Burger and salad with broccoli slaw.

Here I ate it as a snack with an Italian Herb Flatout wrap, red pepper hummus and spinach.
I really liked this sausage and despite the name, "Spicy" my taste buds didn't find it very spicy at all and I thought it had a great flavor. This particular sausage has only

100 cals, 11g of protein, 6g of fat and 2 carbs.

I have eaten it for a quick dinner, snack and breakfast. I love that they are all fully cooked and natural so they are so quick and easy to make! Just nuke for 30 sec., grill for a few minutes, or cut up and warm in a pan. I must admit I have even popped one in my mouth cold.

Yesterday was the little ones last day in gymnastics and we have officially moved on to karate.

Today, I went hiking with my Aunt. We had a great time and probably went about 6 miles. It was a great change of pace and I had such a great time chatting that it didn't even feel like exercise! My Aunt....Before I left I broke into some loot that a sweet little fairy left me and made a shake in my new shaker (also left by the sweet little fairy). Jay Robb, I am lovin the new Vanilla Brown Rice Protein Powder!!! Your a protein genius! Thank you!!
I havent been making a lot of dinners lately because the man has been eating out a lot for work. Hopefully I will get in a few good ones the rest of the this week.

CONFESSION OF THE DAY: I never had bad skin until after I got pregnant. Gosh, it sucks now!!! Maybe these hormones the doctor has me on will clear things up???

OUCH!!

Last night I had a bad experience making almond butter. I am not sure what went wrong but I blended for at least 30 min. and all I had was dust! So aggravating, and over a 1/2lb of perfectly good almonds wasted (maybe. I actually still have the dust in my fridge. I couldn't stomach throwing it all away). I am sure I can find some use for them. Any ideas?? Oh and I think by the time I was done I had lost 50% of my hearing. Dinner was a simple lean pork tenderloin with some spices and marinade (did you know if you look hard enough you can find a tenderloin with only 110 cals for 4 ounces. Same as chicken). Along with that was some mixed steamed veggies. Fresh brussel sprouts, green pepper, carrots and sweet potatoes. My little one loves brussel sprouts! No gym today and I was rushing to get out of the house cause I had to go clean at my mom and dads house (family is coming in town tomorrow to stay). Before I left I had to throw together a quick snack. It was 4 egg whites, few slices of banana, and strawberry. When it was done I smeared on 1 tbsp chocolate pb and 1 tbsp regular pb. It looked really ugly after the pb's and I didn't want to put up the pic but it was yummy! At my parents I stopped cleaning to take a lunch break to eat the leftovers from last night, along with a little bit of some left over canned pumpkin that had been chillin in my fridge. Lets just say the pumpkin can and I had it out and I walked away with a pretty nasty cut on my pointer finger. My mom held pressure on it for over 30 min, before it stopped bleeding. I never looked at it but they were talking stitches. I hate blood! I thought I was going to faint! When it stopped bleeding I made them throw on a band aid so I could get back to cleaning. That was at about noon, its now 7:45 and I still don't want to look at it. I am going to make the man change the band aid soon and see what he thinks. Dinner tonight was just something quick. After all that cleaning today the last thing I wanted to do was come home and make a big mess in the kitchen to clean up! The little one didn't think I had enough pics today so she wanted me to add this. I wanted her to look at the camera and smile but she insisted on taking it like this. No, I did not dress her in that. She thinks shes a rock star or something. Idk??? Looks emo to me. Hahaha!!!

I gotta sign off. To many trashy reality shows on to watch tonight.

CONFESSION OF THE DAY: I finally told the man about my blog. First, he laughed. Then, he asked "can you get paid for that?". Then, he said "Do other people actually read it?" So predictable!

Virgin Yogi

So Mon. was pretty much the same as Sun. with the exception of me going to the packed as heck gym. Who knew everyone and their mom wanted to workout on Presidents Day. I did sleep in and go a lot later than usual though bc the man was home. I had an ok workout but when I got home I just felt like I needed more.....sooooo I know a lot of the girls from the blogs I read are huge fans of yoga so I decided to give it a whirl (no I have never done yoga. Pilates but not yoga). After tons of begging I got the hubby to join me :). I did the less is more 20 min. cardio routine from On Demand. It was a great workout and stretch for my muscles but I think maybe just a little to fast paced for beginners. I liked it and will defiantly be doing it again!

For dinner I cooked up this chicken asparagus bake. I wasn't feeling well so I opted for some plain baked chicken and steamed asparagus.
No gym today. I am feeling fine but it took me forever to get motivated to get up and going. I did another yoga video today only this time the little one joined me. It was one that focused on the legs and butt. Man my arse was burnin!! Lunch was a simple salad that consisted of hearts of romaine, chicken, tomatoes, ff feta, and a few steamed veggies that I made in my new steamer (a thoughtful gift from my man). On the side I had a huge bowl of oat bran sweetened with stevia. In other news I checked on my little indoor garden and guess what??????? My brussel sprouts sprouted!!!!! I was so excited that I called 3 people to tell them. Now lets just see how long it takes me to kill them. Hahaa.
Aren't those little sprouts precious? I think so. Well time to do more laundry, cleaning, and then figure out what to make for dinner and what to snack on here in a few....

CONFESSION OF THE DAY: Is it just me or do all stay at home moms feel like their day can be so monotonous and boring? I know I am very lucky to be able to stay home with my little one and I wouldn't change it for the world but sometimes I just fantasize about something more exciting. Maybe a flashy career or spending the day shopping and eating lunch with friends. Just being able to pick up and go as one pleases is one of those little luxuries people take for granted.
