Crazy With Curry

As promised I will reveal my curry recipes that I talked about in my last post but first some pics of Halloween at my house.....

Yes, there were costume changes.

Now for some perfect fall recipes. First up is this delish Curried Butternut Squash and Apple Soup that literally took minutes to throw together...
I just took a pre-baked butternut squash outta my fridge, sauteed one apple with 1 small chopped onion and when nice and soft added 1 1/2 tsp curry powder and 1 tsp cinnamon. Then I heated the squash in the microwave and added the squash and apple curry mixture in the blender with 2 cups chicken broth and 2 cups water, then just blend away. You can start with less liquid if like and of course you can use all water. Then just added water and blend until you get it to your desired consistency. Super simple!!

Next was a recipe from Clean Eating Magazine and I just loved it! Such great flavors that you would never expect to put together.

FRUITY CURRIED CHICKEN
Serves 3

  • Olive oil cooking spray
  • 1 apple and 1 pear, diced
  • 1 small onion, diced
  • 1/2 jalapeno, chopped (I omitted)
  • 2 tbsp fresh ginger, chopped
  • 1/8 raw cashews
  • 2 tsp curry powder
  • 1 tsp cumin powder
  • 1/4 tsp sea salt
  • 1/2 low-sodium chicken broth
  • 1/2 cup fresh or frozen cranberries
  • 3 boneless skinless chicken breasts
  • fresh parsley (optional)
Spritz a large pot with cooking spray and heat over med-high heat. Add fruit (except cranberries), onion, jalapeno, ginger, cashews curry, cumin and salt. Cook until soft, about 5 min. Add broth and cranberries and mix. Add chicken and spoon some over mixture over top. Cover pot and reduce heat to medium-low. Simmer about 15 min. or until chicken is cooked through. Turn chicken once halfway through cooking. Garnish with parsley.
226 cals per serving

So freaking simple and so tasty! A must make for sure. My little one even loved it :).

    I am the treat fairy too. I mean, who gives kids unlimited candy?! Do people do that? My kid would be bouncing off the walls!

  4. hey the food looks yummy.. need to try a pureed soup again, its been a few years (gasp) maybe our tastes have changed.. I especially love how simple it all seems to put together!

    we had such a great time Saturday! I wish I had known about the treat fairy in time but.. the kids have hardly touched the candy we have so..I will dispose of it throughout the week!

  11. I love babies in costumes, they never know what to make of it. It's both adorable and hilarious.

    That soup sounds and looks incredibly delicious. I'll put a mental note down to make that when I'm in a hurry and want some curry! Thanks for posting the recipe!
