Mommy Dates and Candy Apples

Every mommy loves a good play date right? Wanna know what makes it even better? A mommy that cooks and eats like you do!! All you mommas know what I am talking about. Instead of being invited out to a play date to Chuck E Suck E Cheese or McDonald's and watching the other mom chow down on Big Macs and greasy over sized pieces of pizza I got to chill at one cool mommas house and she got to watch me shovel my face with her homemade guac and hummus :). My new mama friend Kim really hooked my little one and I up the other day at our play date. Check out this spread....

We had hummus with zucchini, carrots, broc, and tri colored peppers. Guac, grilled portos, and red peppers. Natalias "peanut sauce", a salad with goat cheese, Ezek bread and little gooey yummy almost raw chocolate cookies :). My final plate..
Kim, honey it was amazing! I am going to return the favor soon babe :).

Now time for another recipe. Last week when I made the Tex Mex Sloppy Joes I ended up with some leftovers and wanted to do something creative with them. So I stuffed these little Nasoya things I found on sale with the leftovers...
and stuck them in the oven to bake...
Can I just tell all you mamas out there that little ones love these things. I am pretty sure it doesn't matter what you put in them, they love them!!! Cheese, meat, chocolate, whatever, they love them!!
I also made another (simple) recipe from Clean Eating.
CANDY APPLE PORK TENDERLOIN

Serves 4

  • 1/4 cup unsweetened apple butter
  • 1 tbsp apple cider vinegar
  • 1 tbsp agave nectar
  • 1 clove garlic, minced
  • 1/4 tsp cinnamon
  • 1 tsp fresh thyme, chopped
  • 1 lb pork tenderloin, cut into 4oz pieces
  • 1 1/2 tsp olive oil, divided
  • sea salt and pepper to taste
  • 1/2 cup unsalted toasted almonds, chopped, on a plate
  1. preheat oven to 400
  2. in a small bowl combine, apple butter, vinegar, agave, garlic and cinnamon. Set aside
  3. season pork on all sides with a 1/2 tsp oil, thyme, salt and pepper. Heat remaining oil in a skillet and sear tenderloin on both sided until light golden brown, about 4 min total.
  4. remove pork from pan, coat each piece entirely with apple butter mixture and place on a lined baking sheet. Roast in oven for 15 min. or until pork is cooked throughout. Remove from oven and roll each piece in sliced almonds. Slice and serve.

I skipped the almonds and served mine over salad...
It was amazingly yummy and I am convinced the apple butter marinade would be great on chicken or fish!

CONFESSION OF THE DAY: Today I am going to the YMCA to swim for a play date and I am scared to wear my bikini around other moms. I am ok if I am out on the lake or something but if I know I am going to be around a bunch of other women I get nervous. Like at one of my hubby's business trips all the moms took their kids to the pool and we were all in our mom suits (one pieces). Anyone else this way?

  1. I wish I had a friend who ate the same way I do! I don't think that will ever happen unless I move somewhere with lots of bloggers.

    Bobby loves those Nasoya things too. I actually have a pack in the fridge right now that I should use.

    Good luck at the YMCA... I get nervous in front of other women too. I'm fine and comfortable around guys, but women freak me out. I feel like they're silently judging me!!

  2. McDonald's playdates...OMG I would die. I will say for all the things I hate about California, I have to give people here their props, it's different and I've never had to do a greasy spoon playdate. I used to live in both NC and SC and I can imagine it would be different out there. So glad you found a friend you can hang with! As a mommy, I know it's hard to connect sometimes...and then throw in that you both like to eat healthy, that's awesome, so happy for you!

    The portos look delish!

    Swimsuit...go wear your bikini loud and proud honey! You look great and you've earned your bikini body so go put that suit on :) But as a woman, I totally understand and (sadly) I think we as women will always second guess oursevles. Always. I am trying to instill more confidence in Skylar than I've ever had.

    Good luck at the Y. I say go for it if you want, but if you know you'll feel judged/uncomfortable, forgo the two piece and just wear a mommy suit ;)

  6. so jealous your friends love healthy eating! whenever i go out to a friend's house it's always pizza and beer...im not complaining but hey, i love my veggies and hummus!! and your dinner looks ahhhh-maazing!!

  8. i had soooo much to catch up on - i am seriously LOVING all your food. such interesting combos and deliciousness, i love it! the boat looked like so much fun, and of course, i can't resist an adorable shot of the lil' punkin.

    also, the sweet potato brownies are on tap to be made next week! yay for healthy spreads and YUMMY eats like that!

  9. I used to hate MCdonalds play dates when my kido's were little...ugg, the smell of stinky feet and french fries.....haha!

  10. i'm going to have tolook for those nasoya things! a 'mom suit'. lol, you look awesome in your bikini- so i say go and flaunt it. i would find it inspiring that you were a fit and confident mom. if they don't maybe they aren't good friends to have. have a great weekend chic!

  16. I love Clean Eating magazine! It's better than some of my old school cookbooks. I've actually made a lot of the recipes and they were easy and great!

    Now I definitely need to make those Tex Mex sloppy joes!

    Um, the pork sounds REALLY good. It's weird, I don't crave pork very often, but when I have it, it has to be the delicious kind that melts in your mouth. Candy apple sounds like it would have some melting action.
    I understand your swimsuit pain. Why are women so hard on ourselves (and each other?!)!

  18. have fun at the Y.. i say wear your bikini- why not??!!! bring a cover-up if you start to feel weird and throw that on. but you worked hard for that bikini bod so show it off! i know moms are crazy about stuff like that...

    ladies in my office make comments about me in the locker room while im getting ready to go out for a run at lunch time (im the youngest and .. ok i'll say it... smallest one here). i just roll my eyes and continue on my merry way.

  19. I too have a hard time finding "friends" or even family to share food similarities with..I am always the wierd one and everyone wants to know WHY or ...well...WHY Ha

  20. I was reading clean eating and saw that candy apple pork recipe. If I ate pork I think I would totally be interested in that. Even as a vegetarian I'm like.. hmmm that sounds like it would taste awesome.
