Guest Post Kim: Celebrity Sighting!!!

Hey Guys!! I am probably suckin down some fruity drink right now on the beach so don't hate!! I just wanted to introduce my guest post. I am thrilled to have a fellow Nashvillian (along with 2 others) doing guest posts for me. The super buff hot mama Kim is up first. I do my lovely 5am workouts at the Y with her where we met (story as follows). She is a fellow SAHM (a lucky lady like me!), has 2 gorgeous kiddos, loves to workout, and feed her body good. From what I here shes not a meat eater but enjoys the ocassional seafood. Enjoy her post!!!!!

So I am on the treadmill at my local Y and who gets on the one beside me… the lovely Justine!! Well I immediately started jumping up and down screaming and crying, snapping pics and begging for an autograph… got so excited that I flew off the treadmill and an ambulance had to be ca… umm… ok none of that happened but I did recognize her right away and realized I was staring at her (I mean what are the odds of a chance meeting with a blog celebrity?) so I just HAD to introduce myself and… well, here we are today… a guest post.. I am so excited!

Then it’s probably not worth sharing with the blogaverse world. But in honor of Justine I decided to make something she might recognize…

That’s right… its oat bran! I did really like it… I added a smashed banana and Naturally More Peanut Butter to it… and the spoon contains a wee bit of my homemade sour cherry jelly. Oh don’t you just love the Farmers market this time of year? I normally would not have added jelly but when I saw those teeny tiny cherries at the market.. I just had to have them!


I did not take a pic of my lunch because no matter what light I used my PB sammie looked pretty sad so I decided to spare you (you‘re welcome!) I know I should have made one of Justine’s famous Hugh Jass salads but… I have braces and did not have an hour to spend slowly chewing the veggie goodness… plus I love PB… don’t judge me!!

I did however, actually make dinner and dessert…. Veggie Pasta and a Kabocha Squash pie, made out of the squash that our sweet Heather gave me… (thanks again Heather!) So I will leave the recipes here at the bottom in case anyone is interested… and thank you so much for having me Justine… this was fun!!


Confession of the Day… Justine is even MORE gorgeous in person… I secretly HATE her! (ok, no not really!) hehe….


Veggie Pasta Carbonara with toasted Breadcrumbs

Btw… these are just the veggies I had in the fridge.. I tend to use something different just about every time…

Linguine Pasta (I usually used all wheat pasta but was almost out so had to use part of the unhealthy stuff)

2 TB of olive oil

2 cloves of garlic

Dash of red pepper flakes

1 cup peas, smashed

Pint of Mushrooms (chopped up pretty fine)

1 roasted (on the grill) Red Pepper

Handful of fresh herbs (basil, oregano, parsley)

1 cup of breadcrumbs, toasted

¼ cup parmesan cheese

Fresh Mozzarella cheese chunks

2 eggs

½ cup pasta water


Heat the olive oil. Throw in the garlic and red pepper flakes. After a minute or so toss in the peas and give ‘em a smash (go ahead get out some frustration) Doing this seems to help with the creaminess. Now add the mushrooms and cook everything until the mushrooms are soft. Add some salt and pepper to taste. Skin and chop up the red pepper and throw it in.

When the pasta is ready toss it in with the veggies and give it all a stir. Now add the herbs, breadcrumbs and cheeses. Mix the eggs and pasta water together and add this a bit at a time until the consistency looks right.. you may not need it all. Now when it’s all together you can serve that sucker up or put the pan under the broiler for a couple of minutes to crisp it up and melt the cheese a little better.. I like this method… the mozz. cheese gets all oozy.. yum!!

    So glad you enjoyed your squash, and yes, I agree, Justine is even more gorgeous in person. But hey, you're quite the looker yourself. :)

  2. so you are able to see the pics? i have chrome and explorer and couldn't see pics on either one.. oh well..no biggie..

    oh and thanks for the compliment! (and just so you know you aren't exactly a squished prune face yourself!!)
