Date With Mom

Currently I am watching the season finale of The Biggest Loser. Love this show! Those people are all so amazing and have done great in their journey. Props to them.

This morning I woke up at the bright dark and early time of 4:30 am to hit up a Just Weights class at the Y as promised. I was already sore from yesterdays workout and this class was pretty tough! It was 45 min long and after ward I hit up the elliptical for about 20 min. All of my body parts have been progressively getting more and more sore one by one through out the day. It now hurts my chest and back when I breath. haha Tomorrow is definitely a day off!!

Breakfast was pretty boring so no pics. My snack was a little more interesting because we are running low on the groceries....
All together now...
One Tumaro's low carb tortilla, Heather's homemade almond butter, cottage cheese, spinach, cinnamon and a few drops of stevia. I must say it was pretty yummy!!

For lunch I took my mommy (yes I said mommy) out for her Mothers Day gift. We hit up a new place in town called Urban Flats. We started off with the Flat Dips appetizer...
If I recall correctly from left to right is a macadamia nut hummus (somewhat sweet, my fav. out of all and I cant wait to recreate), an olive dip, sun dried tomato dip??, and a traditional hummus. Of course we had to order extra flat bread!!

Next up was the main courses which we also split. This one is the Urban Salad with rare tuna...
I was not a fan of this salad and the tuna was way to fishy for my taste!! Must have been old??

This is the Fig and Prosciutto Pizza....
It had great flavors over all. It was also something I would like to recreate at home but without the cheese. Some bites were extremely salty for my taste and my mom agreed. I hate to end on a sour note but the service was also sucky!! Heather, I am glad we didnt waste a lunch date here!!!

My stomach became extremely upset after this meal! I went home and took a nap and skipped my afternoon snack because my tummy was still full and upset from lunch.

For dinner the man and the little one had leftover pizza from last night. I made a Mexi Tuna Salad...

The tuna was mixed with salsa, onion and fresh corn on the cob. I then put that on a bed of raw spinach and kale and topped with more corn cut from the cob.
It was so good! Better than restaurant for sure! On the side I had a bowl of fresh steamed brussel sprouts..
My belly is still hurting as a type. I know I have some kind of food allergy or irritation but I cannot figure it out for the life of me :( I just dipped into the jar of peanut butter and the container of cottage cheese. Yum!! Has to be one of my all time favorite combos :)

CONFESSION OF THE DAY: I was preggo (pregnant) before I was married. It wasn't a surprise, we were trying :). I like to do things backwards :) :)

  1. Wow! You are up early - what awesome dedication! And here I am whinging about my early starts... I've got nothing on you!

    Sounds like a lovely day with you mommy! The macadamia nut hummus sounds really good. Macadamia nuts are sooo delicious. And what a great idea to pair it with hummus!

    I hope the belly stops hurting soon. Not fun :-(

    Macadamia nut hummus? Sounds amazing, but I think I'll wait to try your version instead. :)

    Sorry about your tummy issues - probably all the cheese, right? You know, I can hardly eat out without having stomach problems. I think it's because I've gotten to used to all my simple eats at home without all the heavy sauces and such. Our bodies just weren't made to eat like that, ya know?

    I hope your Sexy Hot package arrives today. Looking forward to getting together for a cheeseless lunch!

  4. Sorry the restaurant wasn't that great! The flat bread looks AMAZING! I seriously need to try CC in a wrap one of these days!
