Highs and Lows

My weekend had it highs and lows but mostly it was pretty relaxing and I got to spend lots of time with my two favorite people. I'll recap Saturdays eats which was plenty and plenty not pictured!!

Breakfast started with my typical bowl of oats and a NEW sausage...
After heating it up I chopped it up with a few spoonful's of cottage and added some cinnamon to hopefully bring out the apple flavor...
I was a bit disappointed with the lack of apple flavor. Not even any apple chunks, can you believe them? I didn't realize the ingredients just said apple powder :(. Damn it I just realized it also contains soy!!! Which kinda brings up the reason why my weekend had some lows. I think I may have mentioned it before but I have been really having some tummy problems which are now turning into other things which I believe may all tie in together and be some kind of food intolerance. Some of my symptoms..
  • horrible gas
  • bloating
  • stomach pain
  • cramps
  • eczema (inside of arms and a little on top lip)
  • loss of menstrual cycle (3 1/2 years now)
  • depression
  • etc, etc, etc....
it has now been going on for about 2 years and I am at my breaking point as the symptoms seem to be getting worse and worse!!! I have already cut out dairy and eggs which I know bothers me. I have now come to the conclusion that soy, and wheat may also be causing problems. This is all a lot to take in and I feel like "WHAT THE HELL DO I HAVE LEFT TO EAT"? I am currently in the process of finding a doctor to hopefully help me solve this mystery. (I have already seen several)

In the mean time back to my eats. Not to sure what I ate for morning snack and lunch but come time for my pre dinner snack I couldn't decide and wanted some of everything. So that's what I had, some of everything...
Hummus, peanut butter, cucumber, celery, red and yellow bell peppers, and a piece of Deviled Caribbean Chicken left from Friday night. Left me satisfied. Dinner I had more Deviled Chicken and a bed of spinach, mixed greens and kale with peppers, tomato, cucumber and fresh mango...
I was still hungry after dinner so I made this...
Hummus, peanut butter, flatout chips and apple slices. After dinner the little one begged me to make her an evil processed cupcake with one of her birthday presents. I put it off long enough so it was time to give in. ( a high for her) Here's the high tech equipment...
The cupcake "fresh" out of the microwave (looked pretty unappetizing if you ask me)...

I snacked on chocolate chips and peanut butter straight from the jar while getting all this together. I did it but I don't condone it!!

Now for the amazing frosting machine....

**Drumroll please**
Far from the picture on the box, don't you think?
If you ask me this thing is a hunk of junk and the cupcake was so dry my little one couldn't even finish it!! GROSS!!! I guess this was a low.

First bite...
Sunday my tummy was really acting up (another low) but I did manage to spend some lovely time with my man before he left for New York this morning (high and a low). The only eats pic I have is of this shake....
Recipe here.

Saturday and today I hit the gym and did a circuit that I jotted down out of Jillian Michael s new book while at Barnes and Noble Friday night. Whooo!! Its killer!!

I will leave you with today's lunch...
Boiled and spiced kale, pork tenderloin, butternut squash tots, and smashed cauliflower.

The man wont be home from New York til late Wed. night and I don't do so good alone :(. I am not looking forward to the next few days but happy for him to get to see a new city. Honey, if you read this on your crackberry the little one and I love you and miss you!!! Be good!!

(Edited to add the forgotten confession)
CONFESSION OF THE DAY: I slept with my mom and dad till I was about 15 years old (not in the middle). I told you I don't like being alone!! I also had horrible nightmares :(.

  1. aw, so sad that you're having lows! I know exactly what you mean--it's soooo frustrating to go to several doctors, have obnoxious symptoms, have to limit your food variety, etc. and STILL see no results or improvements in your health. hopefully you will find a specialist that can fix it so we have no more lows!

on the bright side, you had lots of tasty treats!! :)

    *hugs*

  4. Justine,
Sorry you're having such a rough time, but honestly I do think it's wheat. I also forgot to tell you that my friend always got eczema rashes on her arms (in the creases opposite her elbows) whenever she ate sugar. She went on the anti-candida diet for a while, and everything cleared up. She doesn't have to be as strict now, but she still has to watch her sugar intake. Not to discourage you, but I really do think there are answers out there. You may have to tweak your diet, but there will always be chicken sausage in your life. :)

I love that you copied down a workout from the Jillian Michaels book. I've got that on request at the Green Hills library, but they still have yet to receive a copy. I kind of just want to buy it as I've only heard good things about it.

OK, I'm up way past my bedtime. Just know that I love you, and you call me whenever you need anything. Oh, and I totally crawled in bed with my parents all the time, especially if there was a thunderstorm.

See you soon, okay. Seriously, call me...anytime!

  5. I'm so sorry about all the health issues, i'd say to definitely see a doctor and get this all figured out so that you can start enjoying yourself again with a little tweak in your diet!! You shouldn't have to deprive yourself of foods you love if there are other things causing the problem!! Keep us posted, and I hope it all improves soon!

And ahh your little girl is ADORABLE!

  6. I'm so sorry to hear about your health issues...I am having similar digestive problems lately, if you know what I mean! I don't know what it could be but I hate the idea of having to cut out soy OR dairy! Ah!
I love the idea of having your chicken sausages with cottage cheese for breakfast. I LOVE sweet and davory mixes like that!
I would have killed for that frosting machine as a kid! Actually, it would be kind of fun to have now, too!

  7. Those stomach problems are intense! I can completely understand why that's causing the lows. Those symptoms sound really unpleasant. Added to that, the fact you can't eat certain foods would also be frustrating. I'm not surprised soy, dairy and wheat are possibly to blame - I've read quite a lot about how our bodies aren't really made to digest those sorts of food.

Keep us updated on what you doctor/nutritionist says. In the meantime - I hope Wed comes quickly so you don't feel too alone!
