Full Of Surprises

Morning! Yesterday, after I sat down with my chocolaty swirly bowl of oats the soreness from the last 2 days of workouts began to kick in. I was so sore I could barely wash the dishes but in my weird and twisted mind it also felt good :). For my morning snack I made another swirly creation...It was so good!!! What went in the blender first was...
  • small frozen banana
  • small chunk of apple
  • 1 cup uvam
  • a few frozen strawberries
  • couple drop of stevia
I then poured over half the mixture in my glass and to the remaining I added....
  • splash of water
  • handful of spinach
  • squeeze of lime
I then poured the rest into my pretty pink glass and I ended up with a super yummy and colorful shake. I also snacked on some watermelon and cantaloupe that I was cutting up for lunch later.

For lunch we decided to pack up and go to daddy at work. We had a picnic in his office..
Nothing to fancy and actually kinda random. The spread included
  • PB&H (little one)
  • Applesauce (little one)
  • Fruit (little one and man)
  • Last nights leftovers (me and man)
  • Salad (me)
  • Guac and chip (request from the man)
  • Salsa (one of my salad toppers)
Here's how my salad ended up...
The little ones applesauce ended up in her lap...Surprise!!
The man tried to make sure his lunch didn't end up on him...
Its been a long time since I have been to his office. Shhh...don't tell him but it was a disaster!! Sorry babe, no way I would let clients in there!!! I offered to clean but was shot down :(. The reason its so messy is because he has a male secratary. Its like 2 guys living in a frat house. They are oblivious, those poor souls!

After returning home I was still hungry so I had the smudge of oatgurt that was left mixed with some cottage cheese, cinnamon and stevia...
Did the job.

I was so tired but managed dinner. Baked chicken bites (similar to these), more guac and chips (mans request), corn, brussel sprouts and more salad for me (surprise, surprise)...
The little one enjoying her guac, brussel sprouts, corn and chicken...
I was super full and couldn't even finish my chicken! I know my fat intake was high for the day and man did it fill me up! I fell asleep about 9:30 with no snack.

Today is an off day from the gym for me. It is also much needed. I may take a walk later. Or maybe not. I'm not stressing.

Breakfast was a another surprise....(J/K)
Bowl of oats, chia seeds, banana, and the gift from the Gods :)

CONFESSION OF THE DAY: (who in the world decided it was a good idea to post a confession at the end of each post? haha) You guys know more about me than my own husband and parents!!! I am pretty sure my husband learns things he never knew about me by reading my posts :) Whats life without a few surprises right?? LOL

P.S. all of my salads and guac have been made with fresh grape and beefsteak tomatoes from my garden...

  1. I have to say, I'm very jealous of your tomatoes! Ours haven't been growing very well and homegrown tomaters are the best!

  2. Haha, yeah, I feel good about soreness too. When I do too many chatarungas, aka yoga push ups, I can’t move my arms for days, but secretly enjoy it.

LOL at the man’s bib ;). Yeah, cannot have 2 males running anything—way too messy! I am impressed that the little one loves her brussel sprouts!

Oooh, I hear fresh tomatoes from the garden taste so much yummier than the ones from the store. I would love to plant them someday.

  4. Haha--I always find a small joy in being sore, too. It proves I worked hard! (That, or that I'm really out of shape!) I'm really sore today from doing the 30-Day Shred and I'm lovin' it!

  6. Yum, the 'sand-art' swirly creation looks good! I like the leftovers...I tend to make salads out of our leftovers too. And I am totally jealous that you have a garden!! Oh someday when I get out of apartment-life! :)

  7. Hello lovely! I love your swirly drink. It looks pretty and I bet it tastes delicious too. And your dinner looks fabulous. Though I can't imagine eating that many brussel sprouts. I love my veggies but they are not my fave!

Also, I LOVE outgurt with cottage cheese. Such a great combination. Sometimes I blend them together and add some banana. Yummo.

Also, I'll see if I can find that eggplant recipe for you. From what I know, the only ingredients are eggplant, tomatoes, tomato sauce, onion and garlic.
