Apple Pie Oatmeal Pancake

Well I started off the day with the usual. A 1/2 cup oats with a little banana and stevia and 6 egg whites cooked up with some fresh spinach. After breakfast I headed over to the parents house for a nice walk/jog on the treadmill. I am not really a cardio person (actually I despise it) but it has been so cold here lately and I just felt like I haven't been active enough. I try to lift 3 to 4 days a week and today was my off day so I figured Id pop over and see the folks and have a nice jog while I was at it. I stayed on for a total of 45 min. Thats a long time for me! I mostly walked at about 4.3 but also did some jogging intervals throughout at 6. When I got off I was nice and sweaty so I did some abs to cool down. When I got home I had another breakfast. This time it was a big Oatmeal Apple Pie Pancake. I just tossed some cut up apples in the pan with cinnamon and while they were cooking I put 1/3 lowfat cc, 1/3 cup oats, 3 egg whites, cinn. , and stevia in the blender and mixed. When the apples started to brown I added the mix on top and put the lid on. It took about 5 min. and the finished product was huge apple pie pancake. Man it was good. I also saved a few pieces of the apple and threw them in a bowl with a squirt of honey and some sugar free syrup and nuked for about a min. This was my topping. Super yummy but not very filling me. For some reason I know if I would have eaten all the ingredients separately cooked I would have had a full belly! Funny how that is. Now its lunch time and I have some butternut squash fries cooking as I type and they smell amazing. I guess I ll have those with the left over stir fry from last night.
Lunch was good but there was still a void in my tummy. Soooooo....I decided to make a single serving of No Pudge Fudge brownie. Here it is in all its fudgie beautifulness topped with a little naturally more pb and some chocolate pb.
After my run in with the brownie I was off to put the little one down for a nap. I always have to lay with her for a few to get her to fall asleep but this time a fell asleep as well. I couldn't believe it, we went down at about 2 and didn't wake up till around 5! I must have needed it seeing as I didn't even plan on going to sleep. When I woke up the man was home. He said he had been there for a while. We watched some TV (Lost and Desperate Housewives of Orange County) then I made them some tuna salad sandwiches for dinner. At 7:30 I was finally hungry so I made a simple salad with chicken and a boiled egg. Before bed I had a couple of spoon fulls of cottage cheese because I hate waking up starving.

CONFESSION OF THE DAY: My spoon had a huge run in with both jars of peanut butter before, during and after making the brownie. I guess that's why I wasn't hungry until 7:30. hahaha. I really need to start controlling that thing!! I swear it has a mind of its own!
