Yesterday was a slow day. Started off with the usual breakfast and then did lots of straightening up around the house. For a snack I had a nice patriotic bowl of Greek yogurt and fruit.I dont know if it was because I didnt leave the house yesterday or what but I just felt like constantly snacking. I held out as long as I could and then I made lunch at noon. I had a side salad with one of my favorite dressings from Trader Joes, leftover Greek quinoa, and some homemade chicken soup my mom sent me over the weekend when I wasn't feeling well. It was very filling!
Unfortunately I was hungry again by about 2:30 so I made this yummy spread on a ww tortilla .
Then I played and colored with the little one for a while. After that I began thinking about all the leftovers in the fridge and I decided I would whip up some hummus with the leftover garbanzo beans form dinner the other night. Red pepper to be exact because that's my fav.! So I proceeded and this was my final product.
Not quit as pretty as some but it was tasty! Just a few little tweaks next time and I think it will be money. Needless to say I had to test it out so I had some with a little more of a ww wheat tortilla.
By the time dinner rolled around my stomache was acting up again so I passed. I know its not good to not eat so before hitting the pillow I took a bite of leftover chicken and ate a little of the leftover pineapple swiss chard. Thats all I could handle! Oh and A friend and her husband dropped by to watch American Idol and Desperate Housewives of Orange County. Love the reality junk!
CONFESSION OF THR DAY: Me and the little one turn up the radio real loud while we are in the shower and sing and dance pretty much the whole time. Its fun!
