Good Day!

Yesterday was a beautiful day here in Tennessee. My little one and I got up early and got ready for the day. Before we hopped in the shower she came crawling in the bathroom with her head down and I knew something was up. I keep telling to her to get up but all she was saying was "I am sorry mommy". Finally I coxed her up to see this...
All I could do was laugh. She really thought she was in big trouble but it was to cute and I couldn't be mad. We soon headed out to the store to pick some stuff up. I ventured into Kroger to get some kale and I am glad I did because they had a buggy full of organic stuff marked half off or more so I grabbed a few things for the little one and the man. They love snack bars.Soon after that my mom and dad came by to take the little one bowling. Ya, alone time!!! I came home to eat lunch and made some scrambled egg whites with broccoli, and a low carb tortilla and topped it all with homemade red pepper hummus.
Then I went on a really long, quiet walk around my neighborhood. *Reminder* don't go on walks on trash days when its warm out! Man it was stinky out there!! Later I had a Sarah inspired snack plate. Like the fuchsia nails?
For dinner I made Shrimp Fra Diavolo With Quinoa (thanks to Clean Eating). It was the second time I made it and its delicious.
I served mine over broccoli and skipped the nightly carbs. Its really easy to make. The only part that's a hassle is peeling and deveining the shrimp. Other than that its a cinch. All you need is
  • 1 cup quinoa
  • pam spray or evoo
  • 1 lb large shrimp, shelled and deveined
  • 1/4 tsp sea salt
  • black pepper
  • 1 red bell pepper
  • 1 red onion, thinly sliced
  • 2 cloves garlic minced
  • 1 14.5 oz can diced tomatoes with garlic and basil
  • crushed red pepper, to taste
Just cook the quinoa according to package. Meanwhile heat a skillet and cook the shrimp adding salt and pepper. Transfer shrimp to bowl and set aside. Next cook peppers and then onions in same skillet. Add garlic and cook 1 min. more. Then, just add tomatoes, and crushed red pepper, and shrimp. Cook until heated through and serve on top of quinoa. So good! 340 cals for 3/4 cup quinoa and 1 1/2 cups shrimp mixture.

After dinner I made a microwave chocolate cake for the little one. Its was huge! I think she only ate a 1/3 of it. It was my first time making it and it turned out a little dry. I ll have to make some adjustments. I love that its made with ww flour. I plugged it into fitday and it comes out to roughly 250 cals not including toppings if you want them.
Really I am such a bad photographer!! haha. I am just not good a making stuff look pretty :(. I am working on it though!

CONFESSION OF THE DAY: Although I am still slightly obsessed with not eating carbs at night I used to be way worse. I did this thing called carb cycling where you only eat carbs around your workouts and you dont mix carbs and fat. Something about it slowing down the carbs to the muscle. I still do this sometimes but I am trying to steer more away from it. It makes you crazy trying to analyze every little macro!

  2. I also used to be a carb phobe and cycler. It made me nuts and I had like no energy, bad moods, etc.

    Our life parallels are eerily similar...Livy drew on me with a yellow (thank God) magic marker yesterday, all over my legs AND I have a box of Mighty Bites in my pantry too.

    We're twinsies I think!
