Meeting A Movie Blog Star, and The Best Homemade Hummus

....and not necessarily in that order.

First, I made 2 really yummy things over the past few days that I wanna share. The first one is hands down the best hummus I have made at home and it contained peanut butter which makes it even better. I didn't really measure much but here's the gist..


Peanutty Hummus

  • 3/4 cup garbanzo beans
  • 1/3 cup of your fav. natural peanut butter
  • lime juice (about a 1/2 lime) or lemon
  • salt
  • 2 garlic cloves (or garlic powder)
  • paprika
  • oil (optional)
  • water (add a little at a time till it gets to desirable texture)
Blend it all up in your mixing device of choice and enjoy. It was so smooth and creamy just like the store bought kind. Here I had it with a baked spinach Flatout wrap. They toast up great just like chips. Really yummy!!!!!!! The second recipe is my basic cottage cheese pancakes but with a yummy addition..

Dark Chocolate Peanut Butter Pancakes
  • 1/2 cup cottage cheese (I use lactose free)
  • 1/3 cup oatmeal
  • 2 to 3 egg whites
  • dark chocolate stevia ( or vanilla extract and sweetener of choice)
  • 1/2 to 1 Tbsp. of Hershey's dark chocolate cocoa powder
Blend in blender and then cook like pancakes and top with peanut butter or desired topping. My batter produced 6 decent sized cakes.

On to my yesterdays lunch date. I met the one and only Heather from heathereatsalmondbutter.com. She was even more amazing and sweet then she seems on her blog (if that's even possible)! Here's my plate...Theres a trio of meat in the middle and my first time ever yummy helping of wheat berries. Heather, I had an amazing time and we still have so much more to talk about and lots of healthy shopping to do! I am sad :( that you will be leaving but happy :) we already made another lunch date! I love making friends!! The very nice Gelato girl took some pics of us by the flowers... While we were at Whole Foods you know we couldn't pass up the shopping. I also stopped by the the lovely Trader Joes since it was down the street. Here's some of my goodies... I already put together an awesome concoction with the Agar Agar and something else up there on my counter top but that recipe is soon to come......

CONFESSION OF THE DAY: I couldn't sleep last night because I was so excited to try the recipe I had dreamed up with my Agar Agar. Isn't that funny how I get so excited over food?

    I am so happy that we have now met in person, but sad to be leaving now that I've met you. We just have so much in common, and I CANNOT wait to hang out more.

    Oh my gosh, all your eats - it's like you read my mind and combine all of my favorite foods in your recipes. You are truly a culinary genius.

    Wow, you did rack up at Trader Joe's. How are you liking the Cinnamon Puffins? Good stuff.
