Safe Salads and Homemade Calzones

I know this is starting to get a little repetitive but I ll give give you 2 guesses what I had for lunch and the first one don't count.
The salad contained
  • broccoli slaw
  • romaine
  • mixed organic greens
  • leftover chicken and turkey
  • tomato
  • green peppers
  • green onion
  • cucumber
  • strawberries
Along with the safeness of my salad I had something a little new. A same old eat but just cooked a little different because I was pressed for time. The result was utter yumminess!!! I took a half a big ole butternut squash and sliced into thick chunks and then halved and quartered the slices till I had these cute little triangles. Then I seasoned with cinnamon, salt and chili powder and nuked for 3 min. until soft. I then heated a skillet, sprayed with Pam and made me some yummy Fried Squash.
Enlarged to show texture. haha :)Crisp on the outside. Soft and sweet on the inside. This is new favorite method for cooking squash and sweet potatoes. Its quick and tasty! Lunch left me feeling satisfied but I did some calculations and realized I was a little low in caloire bank. Not a problem! I quickly fixed that delimmema with none other than some lunch dessert.
Doesn't my Vitatop look lonely with whipped cream? The little one stole a few bites but I was happy to share.

For dinner I made something that I had been anticipating for a while. I really wanted to make the pizza dough I made in the post but with a different twist. So this time I made Homemade Calzones. Heres some of the toppings....
Sorry for some of the blurry pics. There was bad lighting where I made them. Here's the first dough rolled out. This was the mans so I made it big. It ended up being a little to thin so the next one I didn't roll out so thin. His fillings were tomato sauce, pesto, pepperoni, shredded chicken, sauteed veggies, and lots of cheese.
Before I popped it in the oven I brushed the outside with a little bit of oil.I don't have an after pic of his but here is the little ones mini calzone...
It got a little oozy. I also made a mini one for myself because my fear of carbs at night got to me...
Mine was filled with chicken, pesto and sauteed veggies. I also had the rest of my 3lb box of salad with the rest of the sauteed veggies and some Greek dressing. These calzones were AWESOME. My husband said, and I quote, "These are good honey, they are really good". I loved them!! They were nice and crisp on the outside and soft and gooey on the inside. I cant wait to make some more. In fact I have one little piece of dough left and I think I will make it for lunch. :) I noticed around blog land that a lot of people had some version pizza last night

CONFESSION OF THE DAY: I am afraid of the dark. Have been for as long as I can remember. I still sleep with a night light. Watching scary movies makes it worse. So bad that I make my husband come to the bathroom with me.

  1. Those calzones look amazing! I am inspired! Can't wait to try it myself!

    I think I am having the same problem as you.. too few calories in the beginning of the day but 1) I like to eat a lot in the evening and not feel bad for it 2) If I eat too much during the day and get that oh so full feeling I want to crawl up under my desk and take a nap. There is no physical activity to work off lunch.... your thought? Over all I think I am eating enough... just later...

  2. I love the idea of a calzone! I'm definitely going to have to try this one soon. I don't count calories because the thought is overwhelming. To lose weight, however, I counted weight watchers points. Looking back on it, it seems like they are very similar, but at the time, weight watcher's point system is what made more sense to me.

  3. You're freaking brilliant - healthy calzones? Love it, and I'm totally scared of the dark too! Chris always makes fun of me, but if I go to bed first, I keep a lamp on until he joins me. So, you're not alone my friend!
